Lemon Parsley Chicken                                     Serves 4

 1 lb thin sliced chicken filets

8tbsp melted butter

½ cup seasoned bread crumbs

4tbsp chopped fresh parsley

4tbsp chopped scallions

2tsp minced garlic

2 lemons, sliced thin, no pits

 Preheat the oven to 350°

 Season the filets with salt and pepper.  Pour 6tbsp of the butter into a baking dish and add the chicken, turning to coat with the butter. 

 Combine the bread crumbs, parsley, onions, and garlic in a medium bowl.  Spoon over the chicken to cover.  Drizzle the remaining butter over the chicken and place 2 lemon slices on each filet.

 Bake for 30 minutes.
